Healthy and easy back-to-school meal ideas with Kelly Senyei

It’s nearly that time of year once more! With the return of school, many parents will once again be packing school lunches for their children.

The host of the podcast “Sports and Forks” is Kelly Senyei. She made an appearance on “GMA3” to offer some quick and healthful back-to-school meal ideas that will ensure your kids eat well all year round.

Parents prefer to eat a filling but simple breakfast before sending their children off to school. Senyei declared that she loves nutritious morning cookies. She claimed that they are ideal for packing in lunch boxes and for a quick grab-and-go breakfast on hectic school mornings. Replace nut butter with sunflower seed butter if you have nut allergies.

Senyei offered an alternative: she said she adores small zucchini muffins, which make for a flexible school lunch or after-school snack choice. It can be simple to grab for packaged snacks to toss in a lunchbox.

Even the smallest (and pickiest) taste testers fail to see how much zucchini is packed into the luscious tiny muffins.

Finally, Senyei provided a creative take on a traditional lunch: make your own freeze-and-thaw filled sandwiches instead of relying on store-bought frozen sandwiches.

Make these sandwiches with a basic cookie cutter and fill them with your favourite fillings, such as the traditional peanut butter and jelly filling (think of the kid-favorite Smucker’s Uncrustables) or something savoury like salami and cheddar.
