RECIPE: Stone Fruit Chicken-Rice Salad
What do you need?
- Â Â Â 3 (6-ounce) skinless, boneless chicken breast halves, trimmed
- Â Â Â 1 teaspoon salt, divided
- Â Â Â 1/2 teaspoon black pepper, divided
- Â Â Â Cooking spray
- Â Â Â 2 tablespoons olive oil
- Â Â Â 1 teaspoon grated lemon rind
- Â Â Â 2 tablespoons fresh lemon juice
- Â Â Â 2 teaspoons Dijon mustard
- Â Â Â 1 1/2 cups pitted, coarsely chopped nectarines
- Â Â Â 1 cup cooked brown rice, cooled
- Â Â Â 1 cup coarsely chopped pitted cherries
- Â Â Â 1/2 cup sliced green onions
- Â Â Â 1/4 cup dry-roasted almonds, chopped
- Â Â Â 3 tablespoons torn mint
Note: This serving is for 4 people.
How do you make it?
- Â Â Â Preheat grill to medium-high heat
- Â Â Â Sprinkle both sides of chicken evenly with 1/2 teaspoon salt and 1/4 teaspoon pepper
- Â Â Â Place chicken on a grill rack coated with cooking spray
- Â Â Â Grill for 5 minutes on each side or until done
- Â Â Â Let it stand for 5 minutes
- Â Â Â Chop the chicken into lean cuts
- Â Â Â Combine oil, rind, juice, and mustard in a large bowl, stirring well with a whisk
- Â Â Â Add chopped, cooked chicken, nectarines, and remaining ingredients
- Â Â Â Toss all the ingredients properly
